Abstract This study evaluated the effect of including clove essential oil (EOcl) in Nile tilapia diets on animal performance and antioxidant power, lipid oxidation, gene expression, texture, pH, color and sensory analysis in fillets. Three levels of EOcl in the diets were evaluated (0.70, 1.05 and 1.40 g/kg), provided over three periods before slaughtering the animals (15, 45 and 60 days). The antioxidant power in the diets increased after including EOcl. There was an interaction effect between the level and period of inclusion of EOcl on the antioxidant power and lipid oxidation of fillets stored up to 14 days after slaughter. Lipid oxidation was reduced by 43.3% compared with the control group. EOcl inclusion in the diet, regardless of level and period, improved texture and promote less gene expression of catalase and glutathione synthetase. This demonstrates that the antioxidant in the tilapia diet acts against the oxidative stress process. Considering the results for the interactions and parameters evaluated, including 1.05 g/kg of clove essential oil in the rations for 15 days before slaughter is indicated because it contributes to a higher fillet quality.

Abstract The presence of PUFA (polyunsaturated fatty acids) in cow milk, including conjugated linoleic acids (CLA) isomers, makes milk susceptible to lipid oxidation, and may lead to the formation of volatile products responsible for a rancid smell. Consequently, including natural antioxidants in the diet of dairy cattle can assist in preventing lipid oxidation. In this study, soybean oil (a source of PUFA) and different ethanolic extracts of Brazilian propolis were included in the cows' feed, and the antioxidant activity and lipid oxidation of the animals' milk was assessed. Antioxidant activity was analyzed using the DPPH method, potassium ferricyanide reduction and chelating ability. Total phenolic compounds and flavonoids were also determined. Lipid oxidation was assessed by determining conjugated dienes and the production of aldehydes (propanal, pentanal, hexanal and octanal). Increased antioxidant activity was seen in the samples of milk from cows receiving propolis. Similarly, the addition of ethanolic extract of propolis to the diet of dairy cattle increased milk protection for two treatments with propolis against lipid oxidation in terms of production of propanal and hexanal. These results confirm the positive effect of applying this natural additive to the diet of lactating cows, improving the nutritional quality of the milk produced.

Abstract This aim of this study was to characterize five varieties of avocado for their proximal composition, physical properties, fatty acids composition, antioxidant capacity, carotenoids and minerals. Quintal variety presented the best result for total lipids, physical properties, carotenoids and minerals. All the varieties presented a predominance of monounsaturated fatty acids (60%). The major monounsaturated fatty acid was oleic acid. Among the varieties analyzed, Breda variety had greater activity results for FRAP (145%) and DPPH (1.1200 µmol TE/g) assays, Quintal had higher values for ABTS analysis, Ouro Verde presented better results for ORAC assay (23%), and Margarida had the best result for L-ORAC analysis (200 µmol ET/g).

Resumo Duas dietas foram avaliadas, uma controle (T1), com adição de 40 mL de solução hidroalcoólica a cada kg de ração e outra (T2), com adição de 40 mL do produto Homeopático a cada kg de ração em tilápias do Nilo. Foram distribuídos 200 peixes em 10 aquários, totalizando 20 animais em cada aquário, onde permaneceram por 63 dias. Foi realizado o monitoramento dos parâmetros físicos e químicos da água, desempenho dos animais, determinação da composição centesimal e a composição de ácidos graxos em cabeças de tilápia do Nilo. Não houve diferença estatística significativa entre os tratamentos em relação aos parâmetros da água, desempenho, determinação de umidade, cinzas, proteína bruta, lipídios totais. As tilápias do Nilo que receberam o produto homeopático incorporado na ração apresentaram a razão AGPI/AGS superior ao do tratamento controle, apresentado diferença significativa. As cabeças das tilápias analisadas constituem uma excelente fonte de lipídios totais.

Abstract Two diets were evaluated, one control (T1), with the addition of 40 ml of hydroalcoholic solution to each kg of feed and other (T2) with 40 ml of the homeopathic product every kg of feed in Nile tilapia. 200 fish were distributed in 10 water tanks, totaling 20 animals in each of the boxes, where they remained for 63 days. During the experiment was carried out monitoring of the physical and chemical parameters of water, animal performance, determine the chemical composition and fatty acid composition in heads of Nile tilapia. there was no significant statistical difference between treatments in relation to physical and chemical water parameters, performance, moisture determination, ash, crude protein, total lipids. The Nile tilapia that received the homeopathic product incorporated in the feed showed the PUFA / SFA ratio higher than the control treatment presented significant difference. The heads of analyzed tilapia are an excellent source of total lipids.

RESUMO. O objetivo deste estudo foi determinar a composição dos ácidos graxos e os índices de qualidade nutricional dos lipídios totais no tecido adiposo da tilápia do Nilo da aquicultura continental do Estado da Paraíba, Brasil. As tilápias foram capturadas em seis pisciculturas. Após o abate e sangria, o tecido adiposo da cavidade ocular foi reservado, congelado e liofilizado para análise da composição de ácidos graxos por cromatografia gasosa. Os ácidos graxos majoritários detectados em ordem decrescente foram: ácido oleico, ácido palmítico, ácido linoleico, ácido esteárico e ácido palmitoleico. O grupo mais abundante no tecido adiposo da cavidade ocular foi o dos ácidos graxos monoinsaturados, enquanto que na ração o grupo mais abundante foi o grupo dos ácidos graxos poli-insaturados, com percentual do ácido linolênico variando entre 32,99 e 37,57%. Os índices de qualidade nutricional dos lipídios variaram de 0,491 a 0,575 para o Índice de Aterogenicidade, 0,543 a 0,741 para o Índice de Trombogenicidade; e 1,918 até 2,176 para a razão entre hipocolesterolêmicos / hipercolesterolêmicos. De acordo com a composição dos ácidos graxos e a qualidade nutricional dos lipídios totais, é possível recomendar o uso deste subproduto para o consumo humano ou elaborar produtos para consumo animal.

ABSTRACT. This study aimed to determine the fatty acid composition and nutritional quality indexes of total lipids in adipose tissue from the orbital cavity of Nile tilapia from continental aquaculture in Paraiba State, Brazil. The tilapias were captured in six fish farms, and after slaughtering and bleeding, the adipose tissue from the orbital cavity was reserved, frozen and lyophilized for analysis of fatty acid composition by gas chromatography. By decreasing order, oleic, palmitic, linoleic, stearic, and palmitoleic acids were the most abundant ones. Monounsaturated fatty acids were the most prominent group in orbital cavity adipose tissue, where as polyunsaturated fatty acids were most abundant in the diet, with a percentage of linolenic acid ranging from 32.99 to 37.57%. Nutritional quality indexes of lipids varied from 0.491 to 0.575 for Atherogenicity Index, 0.543 to 0.741 for Thrombogenicity Index, and from 1.918 to 2.176 regarding the ratio of hypocholesterolemic/hypercholesterolemic. According to the composition of fatty acids and the nutritional quality of total lipids, the use of this byproduct can be recommended for human consumption or to elaborate products for animal intake.

Resumo: O objetivo deste trabalho foi avaliar a composição proximal e de ácidos graxos dos músculos dorsal e ventral em pirarucus (Arapaima gigas) selvagens, capturados em um lago amazônico brasileiro. Os músculos dorsal e ventral foram dissecados, liofilizados, embalados a vácuo, e sua composição proximal e de ácidos graxos foram analisadas. Cinzas, proteínas totais e lipídeos foram inversamente proporcionais à umidade e apresentaram teores maiores no músculo ventral. Foram quantificados 27 ácidos graxos em ambos os músculos sem diferença significativa entre eles, exceto para os ácidos heneicosílico, palmitoleico, γ-linolênico e dihomo-γ-linolênico. Ácidos graxos saturados e monoinsaturados predominaram em ambos os músculos. O ácido eicosapentaenoico (EPA) e o docosahexaenoico (DHA) foram quantitativamente similares 9,25 (dorsal) a 10,14 (ventral) e 8,50 (dorsal) a 10,63 (ventral) mg g-1 do total de lipídeos, respectivamente. O conteúdo de EPA+DHA nos músculos dorsal e ventral foi 113,25 e 165,78 mg 100 g-1, respectivamente. A proporção de ácidos graxos poli-insaturados/saturados (0,54 e 0,59 para os músculos dorsal e ventral, respectivamente), n-3/n-6 (0,20 e 0,21) e hipocolesterolêmicos/hipercolesterolêmicos (1,41 e 1,45), assim como os índices de aterogenicidade (0,59 e 0,53) e trombogenicidade (1,02 e 0,94), indicam que o músculo do pirarucu pode ser considerado uma boa fonte dietética de EPA+DHA, e a qualidade nutricional de seus lipídios pode ser benéfica para a saúde humana.

Abstract: The objective of this work was to analyze the proximate and fatty acid composition of the dorsal and ventral muscles of wild pirarucu (Arapaima gigas) captured from a Brazilian Amazonian lake. Dorsal and ventral muscles were dissected out, freeze-dried, vacuum-packed, and had the proximate and fatty acid composition analyzed. Ash, total proteins, and lipids were inversely proportional to moisture and had higher levels in the ventral muscles. Twenty-seven fatty acids were quantified in both muscles without significant differences between them, except for the heneicosylic, palmitoleic, γ-linolenic, and dihomo-γ-linolenic acids. Saturated and monounsaturated fatty acids were predominant in both muscles. The eicosapentaenoic (EPA) and docosahexaenoic (DHA) acids were quantitatively similar: 9.25 (dorsal) to 10.14 (ventral) and 8.50 (dorsal) to 10.63 (ventral) mg g-1 of total lipids, respectively. The EPA+DHA content of the dorsal and ventral muscles were 113.25 and 165.78 mg 100 g-1, respectively. The ratios of polyunsaturated/saturated (0.54 and 0.59 for the dorsal and ventral muscles, respectively), n-3/n-6 (0.20 and 0.21), and hypocholesterolemic/hypercholesterolemic fatty acids (1.41 and 1.45) ratios, as well as the atherogenicity (0.59 and 0.53) and thrombogenicity (1.02 and 0.94) indices, indicate that pirarucu muscleis a good dietary source of EPA+DHA, and its nutritional lipid quality can be beneficial for human health.

RESUMO: Objetivando avaliar rendimento, cor e composição química dos cortes comerciais (cauda, filé de lombo, filé de dorso e coxa) da carne do jacaré-do-Pantanal nos diferentes sexos, foram processados 20 animais, sendo estes, dez fêmeas (3677g) e dez machos (3510g). Não houve interação significativa (P>0,05) entre cortes comerciais e sexo para peso dos cortes, teor de umidade e cor. O rendimento da cauda foi superior aos demais cortes, sendo o rendimento das fêmeas (17.0%) superior ao dos machos (15,9%). A coxa dos machos apresentou menor teor de proteína (20,8%), em relação aos demais cortes. As fêmeas apresentaram maior teor de lipídeos na cauda (2,4%) e na coxa (0,8%), em relação aos machos (1,7% e 0,4%, respectivamente). A cauda apresentou maior quantidade de ácidos graxos monoinsaturados (45,2%) e maior razão n6/n3 (4,6). A luminosidade não foi diferente entre cortes e sexos. Os machos apresentaram carne com coloração mais amarelada em relação às fêmeas, e a coxa e o filé de dorso tiveram cor mais avermelhada, comparadas ao filé de lombo e cauda, independente do sexo. Concluiu-se que houve influência do sexo no corte de cauda, para o teor de lipídios e rendimento, sendo que a fêmea apresentou rendimento e lipídeos maiores que o macho.

ABSTRACT: This study evaluated the yield, color, and chemical composition of commercial cuts (tail, sirloin cut, back fillet, and thigh) of Pantanal caiman meat in both sexes. The yield of tail was higher than other cuts, and the yield of females (17.0%) was higher than males (15.9%). The thigh of males had lower protein content (20.8%) compared with other cuts. Females showed a higher lipid content in the tail (2.4%) and thigh (0.8%) compared with males (1.7% and 0.4%, respectively). The tail presented the greatest content of monounsaturated fatty acids (45.2%) and higher n6/n3 ratio (4.6). Although lightness was not different among cuts or between sexes, there were differences in color. Males have more yellowish meat compared with females. Thigh and back fillet were more reddish when compared to sirloin cut and tail, regardless of sex. In conclusion, female tail meat provided greater yield and lipid content than males, and this result was statistically significant. These findings can help producers and consumers alike, better understand yield, quality, and nutritional quality of Pantanal caiman meat.

Abstract The present work aimed at studying the effect of different drying methods applied to tilapia byproducts (heads, viscera and carcasses) fed with flaxseed, verifying the contents of omega-3 fatty acids. Two diets were given to the tilapia: a control and a flaxseed formulation, over the course of 60 days. After this period, they were slaughtered and their byproducts (heads, viscera and carcasses) were collected. These fish parts were analyzed in natura, lyophilized and oven dried. Byproducts from tilapia fed with flaxseed presented docosapentaenoic, eicopentaenoic and docosahexanoic fatty acids as a result of the enzymatic metabolism of the fish. The byproducts from the oven drying process had lower levels of polyunsaturated fatty acids. In the multivariate analysis, the byproducts from fish fed with flaxseed had a greater composition of fatty acids. The addition of flaxseed in fish diets, as well as the utilization of their byproducts, may become a good business strategy. Additionally, the byproducts may be dried to facilitate transport and storage.

RESUMO O feijão adzuki consiste de pequenos grãos de cor vermelha, ricos em diversos nutrientes essenciais e que são utilizados em pratos tradicionais na Ásia e, atualmente têm várias aplicações ao redor do mundo. Neste trabalho, objetivou-se avaliar os cultivares angularis e niponensis produzidas na região sul do Brasil. Ambas os cultivares apresentaram valores de composição proximal similares aos encontrados na literatura e os ácidos graxos majoritários foram 18:2n-6, 16:0 e 18:3n-3. Todas as amostras apresentaram prevalência de ácidos graxos poli-insaturados, bem como razões e índices nutricionais adequados. Os grãos apresentaram teores significativos de tocoferóis e atividade de vitamina E, resultando em alta contribuição para a ingestão de referência diária. Concentrações de ferro, manganês e zinco também foram importantes, em razão das suas funções como cofatores em reações metabólicas. Compostos fenólicos e flavonoides corroboraram com outros estudos e contribuíram para atividade antioxidante. A análise multivariada de componentes principais permitiu distinguir as cultivares, e os dois componentes principais selecionados puderam explicar 92,28% da variância total dos dados.

ABSTRACT Azuki beans are small red grains rich in several essential nutrients used in traditional dishes in Asia that, nowadays present many applications around the world. This work aimed at evaluating angularis and niponensis cultivars from south region of Brazil. Both cultivars presented proximal composition similar to literature and the majority fatty acids were 18:2n-6, 16:0 and 18:3n-3. All samples showed polyunsatured fatty acids prevalence and nutritional indices and ratios considered adequate for biological system maintenance of a healthy organism. The grains presented significant contents of tocopherols and vitamin E activity, resulting in a high contribution to the dietary reference intake. Significant contents of iron, manganese and zinc were also found in the azuki beans, and they are very important mainly due to their function as cofactors in metabolic reactions. Phenolic compounds and flavonoids corroborated with other studies and contributed to the antioxidant activity. The principal components multivariate analysis allowed distinguishing the cultivars, and the two principal components could explain 92.28% of data variance.

AbstractFlour prepared via current assay methodologies from the carcasses of the Pantanal alligator (Caiman crocodilus yacare) was analyzed for its chemical composition, minerals, fatty acids, and sensorial profile. Carcasses of the Pantanal alligator, originating from the Coocrijapan scientific zoo, Cáceres MT Brazil, were utilized. The carcasses were cooked for 60 minutes in a pressure cooker with water containing 2% salt and 5% chimichurri. The cooked carcasses were then ground and the mass was used for the manufacture of flour via three techniques: non-smoked, hot-smoked, and liquid-smoked. After each technique, the carcasses were dehydrated at 60ºC for 3h and were ground. Alligator flour was then produced. The moisture of liquid-smoked flour (10.97%) was higher than that of non-smoked flour (3.78%) and hot-smoked flour (4.43%). The flours provided high protein (57.11% - 58.27%) and ash (23.45 – 26.42%) rates, and were predominantly calcium (6.77% - 7.69%), phosphorus (3.67% - 4.05%), and iron (73.13 – 273.73 ppm/100 mg). Smoked-flour had a better acceptance rate by tasters when compared to non-smoked flour. Results show that flours produced from alligator carcasses had high protein, ash, and mineral rates and a reasonable acceptability by most tasters.

Beetroot leaves (Beta vulgaris L.) are commonly cut off and discarded before using its bulb due to lack of knowledge of how to use them. Aiming at using these leaves, in the present study, in natura and dehydrated beetroot leaves were chemically characterized in terms of fatty acid composition, proximate composition, minerals, total phenolic compounds (TPC), and antioxidant activity by DPPH• in different stages (60, 80, and 100 days) of development. The beetroot leaves showed significant levels of protein and lipids in all developmental stages, and all proximate composition nutrients decreased during these maturation stages; the highest content was observed at 60 days. The Fe content decreased during the developmental stages (from 342.75 to 246.30 mg.kg-1), while the content of K increased (from 13,367.64 to 20,784.90 mg.kg-1). With regard to to fatty acid composition, linolenic acid was present in the greatest quantity, and it increase up to 2.58 mg.g-1 (in natura) and 40.11 mg.g-1 (dehydrated) at 100 days of development. The n-6/n-3 ratios were low in all stages. The TPC and antioxidant activity by DPPH• changed during the developmental stages. The TPC was highest in the 100-day dehydrated leaves (15.27±0.12 mg GAE.g-1 FW), and the 50% inhibition of DPPH• (IC50 89.52 µg.mL-1) were better in the 60-day in natura leaves. This study shows that all developmental stages produced satisfactory results, and therefore, these leaves can be reused as food. The antioxidant activity and the chemical constituents, mainly the ω-3fatty acid, increased during the stages of development.

This study developed a gluten-free granola and evaluated it during storage with the application of multivariate and regression analysis of the sensory and instrumental parameters. The physicochemical, sensory, and nutritional characteristics of a product containing quinoa, amaranth and linseed were evaluated. The crude protein and lipid contents ranged from 97.49 and 122.72 g kg-1 of food, respectively. The polyunsaturated/saturated, and n-6:n-3 fatty acid ratios ranged from 2.82 and 2.59:1, respectively. Granola had the best alpha-linolenic acid content, nutritional indices in the lipid fraction, and mineral content. There were good hygienic and sanitary conditions during storage; probably due to the low water activity of the formulation, which contributed to inhibit microbial growth. The sensory attributes ranged from 'like very much' to 'like slightly', and the regression models were highly fitted and correlated during the storage period. A reduction in the sensory attribute levels and in the product physical stabilisation was verified by principal component analysis. The use of the affective test acceptance and instrumental analysis combined with statistical methods allowed us to obtain promising results about the characteristics of gluten-free granola.

The objective of this study was to evaluate the incorporation of conjugated linoleic acid and α-linolenic acid in fillets of pacu fish raised in net cages and fed diets enriched with these acids. The fish were fed for 49 days, and at the end of this period the fatty acid content in the fillets was determined by gas chromatography. Concentrations of α-linolenic acid, eicosapentaenoic acid, and the total omega-3 (n-3) fatty acid in the fillets increased, improving the n-6/n-3 ratio. In addition, the incorporation of conjugated linoleic acid in the fish fillets proved well established. This study showed that the use of diets enriched with conjugated linoleic acid and α-linolenic acid results in the incorporation of these acids in the of pacu fish fillets, improving their nutritional quality.

This study quantified the fatty acids and evaluated the proximate composition, antioxidant activity (using the Quencher procedure), and total phenolic compound concentrations in Brazilian rice cultivars. The cultivars studied showed high amounts of unsaturated fatty acids, such as linoleic and oleic acid. The ratios of polyunsaturated and saturated fatty acids obtained were high. Regarding the antioxidant activity, the best results were found using the ABTS method and the worst in the DPPH assay. The results of the DPPH and FRAP assays showed the highest correlation. The antioxidant capacity results obtained were also much higher than those reported for other varieties worldwide. Therefore, the Quencher procedure is highly suitable for application in cereals such as rice, especially when combined with the ABTS radical capture method.

The objective of this study was to investigate the fatty acid composition of Pimedolus maculatus fillets of fish fed with different diets. The fish were submitted to an adaptation period (over 30 days) and fed only a control diet (diet I). After this period, the fish were divided into two groups: one group received a diet enriched with flaxseed oil (diet II), and the other received a diet enriched with conjugated linoleic acid (CLA) (diet III). Subsequent collections were undertaken after 25 and 50 days. Compared to the control samples, fish fed diet II showed an increase in concentrations of total fatty acid omega-3 (n-3) in the fillets, with an improvement ratio of n-6/n-3. The incorporation of CLA into fish fed diet III was successful. Supplementing the diet of Pimedolus maculatus with CLA and flaxseed oil led to improvements in nutritional quality and fatty acid profile of the fish fillets.
